Have you struggled with food going bad quickly in the fridge? Herbs, certain fruits and opened packets of smoked salmon are the worst for me – they always go bad before I get to finish them all. Therefore, I was very excited when FoodSaver reached out to me, and sent me an FM2000 Vacuum Sealing System to try, which is available on Amazon Prime.
It arrived quickly and was very compact and light. There was no assembly required, simply plug it in, and it’s ready to go! The instructions are short and easy to follow, and I couldn’t wait to test it out on some lox cream cheese bagel sandwiches!
I love lox bagel sandwiches, but usually only make enough for one meal at a time, because it does not keep well in the fridge. But vacuum sealing them make them last much longer as it gets rid of the air that enables oxidization of the food. I used some pre-sliced lox, cucumber slices, and some Philadelphia veggie cream cheese, and some homemade scallion cream cheese (just mix plain cream cheese with chopped fresh scallions).
First, I cut out an appropriate portion of the FoodSaver vacuum seal roll – it basically is a plastic sleeve that will be sealed off with food placed inside (so leave about 3 inch margin on each side to be sealed). Place a bagel sandwich inside it, and place one unsealed side into FoodSaver. Press the seal button to seal. Then place the other side (unsealed) in FoodSaver and press the vacuum seal button to vacuum the air out. Then, press the seal butter to seal it off. That’s it – I got myself a vacuum sealed sandwich that stays fresh in the fridge to have as a delicious work lunch later in the week.
Of course, the machine can be used for many other things. I’ve been using it to seal leftover herbs – they wilt much slower. You can also portion out big amounts of meats and seafoods, and vacuum seal them before freezing, to extend their freezer life – saving money and reducing food waste. Finally, we do a lot of sous vide cooking at home, so this is a great way to vacuum the food to be sous vide!
